Read this before you trust a number

Gellan gum is dosed by outcome, not by rule. The ranges behind these tools describe where most products land, but the same polymer behaves differently at a different water hardness, a different total solids, a different grade and a different fill temperature.

Use the tools to choose a starting point and to work out which variable is likely to move the answer. Then run the bench trial. One well-designed trial will teach you more than any table, including these.
