You don't simply put it in cold water and wait for it to disappear.

What Does Heating Actually Do?
Heating helps the gellan gum polymer chains become fully hydrated and dispersed in the water.

How Hot Does It Need to Be?

Why Does My Gellan Gum Form Lumps?
Usually, the problem is not that the powder "doesn't dissolve."

If too much powder contacts water at the same time, the outer layer hydrates rapidly and forms a sticky coating.
Water then has difficulty reaching the dry material inside.
That's how you get those annoying little lumps.
One practical solution is to add the powder slowly while maintaining good agitation.
Does the Same Process Work for Every Application?

A beverage, plant tissue culture medium and food gel may require different processing conditions.
The formulation can also change the hydration behavior.
For example, sugar, salts, proteins and acids can all affect the system.
So when moving from a simple water test to a real product, don't assume the exact same process will work.
A Simple Test
If you're not sure whether your gellan gum is hydrating properly, make a small batch with plain water first.
Keep the test simple.
Use good mixing and sufficient heat.
Then cool the solution and observe the result.
If the simple water test works but the finished formulation does not, the problem may be coming from another ingredient or processing step.

Gellan gum needs more than just water.
