Is Gellan Gum a Thickener or a Gelling Agent?

Gellan gum can act as both a gelling agent and a stabilizer, but its behavior is quite different from typical thickening gums such as xanthan gum or guar gum.

When people first hear about gellan gum, they often ask:

"Is gellan gum a thickener?"

The answer is a little more complicated than yes or no.

Gellan gum can increase viscosity, but its most interesting properties are actually related to gel formation and suspension.

Is gellan gum a thickener?

Yes, it can contribute to viscosity.

But gellan gum is not normally used in exactly the same way as xanthan gum or guar gum.

With a typical thickener, the main goal is often to make the liquid thicker.

With gellan gum, the goal may be completely different.

You may only need a very small amount to create enough structure to keep particles suspended.

What does gellan gum actually do?

Depending on the concentration and formulation, gellan gum can work as:

  • A gelling agent
  • A stabilizer
  • A suspending agent
  • A thickening agent

The same ingredient can therefore behave very differently depending on how you use it.

Why doesn't a tiny amount always make the drink thick?

This is one of the interesting things about gellan gum.

At a very low concentration, it can create a weak three-dimensional structure without making the beverage feel obviously thick.

That structure can help prevent particles from settling.

So you might have a beverage that still pours almost like water, but has much better suspension stability.

That's very different from simply increasing viscosity.

Gellan gum vs xanthan gum

Xanthan gum is well known for its strong thickening ability.

If you add enough xanthan gum to water, the viscosity increases noticeably.

Gellan gum can work differently.

Instead of simply making the entire liquid much thicker, it can create a weak network that helps hold particles in suspension.

This is why replacing xanthan gum with gellan gum is not necessarily a one-for-one substitution.

What about guar gum?

Guar gum is also primarily used for thickening and texture.

It can provide body and viscosity at relatively low concentrations.

Gellan gum can provide some viscosity too, but its ability to form a gel structure makes it useful for applications where simple thickening isn't enough.

Can gellan gum replace xanthan gum?

Sometimes, but not automatically.

It depends on what xanthan gum is doing in your formulation.

If xanthan gum is there mainly to increase viscosity, gellan gum may not give you the same mouthfeel.

If xanthan gum is being used to help suspend particles, then gellan gum may be worth testing.

But you should compare the actual formulation rather than assuming the two ingredients are interchangeable.

What happens when you increase gellan gum?

Increasing the concentration generally increases the strength of the structure.

At some point, the liquid may become noticeably thicker.

Keep increasing it and you may eventually get a gel.

This is why dosage matters so much.

A small change in concentration can sometimes make a surprisingly large difference in the final texture.

Why is gellan gum useful in beverages?

This is where the difference between thickening and suspension becomes really important.

Imagine a drink containing tiny particles.

You could make the entire drink very thick so that the particles settle more slowly.

But consumers probably don't want a thick drink.

Gellan gum offers another approach:

Create just enough structure to keep the particles suspended while keeping the beverage relatively free-flowing.

That can be a much better solution.

Does HA or LA matter?

Yes.

High acyl and low acyl gellan gum have different gel characteristics.

HA generally gives a softer and more elastic structure.

LA generally gives a firmer and more brittle structure.

So the choice of gellan gum type should depend on what you want the final product to do.

The simple answer

Gellan gum can be a thickener, but calling it "just a thickener" misses the point.

Its real strength is its ability to create structure at low concentrations.

That's why it can be useful for:

gels, suspension, stabilization and texture control.

If your only goal is to make a liquid thicker, there are many hydrocolloids you could consider.

But if you want a liquid that looks thin, pours easily and still keeps particles suspended, gellan gum becomes much more interesting.
