If you have worked with gellan gum before, you have probably heard of "high acyl" and "low acyl."

But what exactly is high acyl gellan gum?

And why would you choose it instead of low acyl gellan gum?

The simple answer is:

High acyl gellan gum is the type to look at when you want a soft, elastic structure rather than a hard, brittle gel.

What Is High Acyl Gellan Gum?

High acyl gellan gum, usually shortened to HA gellan gum, is a form of gellan gum that retains more of the natural acyl groups on its polymer chain.

Those groups make a surprisingly big difference to how the gum behaves.

Instead of forming a hard and brittle gel, HA gellan gum tends to form a soft, flexible and elastic gel.

It also has very good suspending properties at low concentrations.

That is why HA is especially interesting for beverages and other liquid products.

What Does High Acyl Gellan Gum Look Like?

Commercial HA gellan gum is usually supplied as a fine powder.

The powder itself is not very different from other gellan gum powders just by looking at it.

The important difference is what happens after you hydrate and cool it.

Once properly hydrated, HA gellan gum can develop a weak three-dimensional structure in the liquid.

At higher concentrations, that structure can become a soft gel.

What Kind of Gel Does HA Gellan Gum Make?

This is probably the biggest difference between HA and LA.

HA generally produces a:

  • Soft gel
  • Elastic gel
  • Flexible gel
  • Non-brittle gel

If you press an HA gel, it tends to deform and recover rather than simply breaking into pieces.

That makes it useful when a firm, brittle gel is not what you want.

Why Is HA Gellan Gum So Useful in Beverages?

This is where HA really stands out.

You often don't want to turn a beverage into a gel.

You want to keep tiny particles suspended.

For example:

  • Fruit pulp
  • Cocoa particles
  • Plant proteins
  • Minerals
  • Fiber
  • Other insoluble ingredients

A very small amount of HA gellan gum can create enough structure to slow down sedimentation.

The drink can still flow normally when you pour it.

This is sometimes described as a fluid-gel effect.

At rest, the system has enough structure to hold particles.

When you shake or pour it, the structure breaks down and the product flows.

How Much HA Gellan Gum Is Needed?

There is no universal dosage.

For suspension applications, the amount can be surprisingly low.

Depending on the formulation, HA gellan gum may be used at levels around 0.01–0.05%.

That is only about 10–50 g per 100 liters.

But don't treat this as a fixed recipe.

The required amount depends on the particles, pH, mineral content, processing conditions and the type of beverage.

The best dosage is the lowest level that gives you the stability you actually need.

Does HA Gellan Gum Need Heat?

Yes, proper hydration is important.

Simply dispersing the powder in cold water is not the same thing as fully hydrating it.

For many applications, HA gellan gum is hydrated at around 85–95°C.

The exact process depends on the formulation and equipment.

Good dispersion is also important.

If the powder forms lumps before hydration, part of the material may not hydrate properly.

What Happens When HA Cools?

As the hydrated solution cools, the gellan gum chains begin to associate and form a network.

With HA gellan gum, this normally results in a softer and more elastic structure.

At a low concentration, you may barely notice a gel at all.

But that weak structure can still be enough to improve suspension.

This is one of the reasons HA is so useful.

You don't always need a strong gel.

Sometimes you just need a little structure.

HA Gellan Gum and Plant-Based Milk

Plant-based milk is one of the most interesting applications for HA gellan gum.

Oat milk, almond milk, soy milk and other plant-based drinks can contain particles that slowly settle during storage.

HA gellan gum can help keep these particles suspended.

The goal is not to make the drink thick.

The goal is to keep the system stable while maintaining a normal drinking texture.

This is also why simply adding more gellan gum is not always the answer.

Too much can make the product feel wrong.

HA Gellan Gum in Fruit Drinks

HA can also be useful in cloudy juices and fruit beverages.

Fruit particles tend to aggregate and settle during storage.

A small amount of HA gellan gum can help create a structure that slows this process.

The exact result depends strongly on the fruit system.

Acidity, minerals, pulp concentration and processing conditions can all change the behavior.

So a dosage that works perfectly in one juice may not work in another.

What About Dairy and Dairy Alternatives?

HA gellan gum can also be useful in milk-based and dairy-alternative products.

Its soft structure and suspension properties can help improve stability while maintaining a relatively smooth texture.

This is particularly useful when the formulation contains ingredients that tend to settle or separate.

HA Gellan Gum Is Not Just a "Soft Gel" Ingredient

This is an important point.

If you only think of HA as a gelling agent, you are missing one of its most useful properties.

At very low concentrations, HA can act more like a suspending and stabilizing agent than a traditional gel former.

That is why the same ingredient can be used in a beverage at a very low level and in a dessert or gelled product at a much higher level.

The function changes with concentration and formulation.

What About pH?

HA gellan gum can be used in acidic products, which is one reason it is useful in beverages.

But pH is still an important part of the formulation.

A beverage at pH 4.0 is not necessarily going to behave exactly the same as one at pH 3.5.

When developing an acidic product, test the gellan gum at the actual final pH rather than assuming that a result from another formulation will carry over.

What About Calcium and Other Minerals?

Mineral ions can affect gellan gum behavior.

Calcium, sodium and potassium may already be present in the formulation through water, mineral salts or other ingredients.

So you should consider the complete mineral system rather than looking only at the HA dosage.

This becomes particularly important when moving from a laboratory formula to production.

The water source may be different.

The ingredients may be different.

And the final result may change.

Is HA Better Than LA?

Not really.

They are good at different things.

If you want a soft, elastic structure and good suspension, HA is often a very good choice.

If you want a firm, brittle and clear gel, LA is usually more suitable.

So the better question is not:

"Which one is better?"

It is:

"What do I want the product to do?"

When Would I Choose High Acyl Gellan Gum?

I would look at HA when the application needs:

  • Particle suspension
  • Beverage stabilization
  • A soft and elastic gel
  • A smooth texture
  • Flexible gel structure
  • Low-dose stabilization
  • A fluid-gel type system

It is especially interesting when you want stability without making the product feel heavily thickened.

Common Mistake: Using HA When You Actually Want a Firm Gel

This happens.

Someone wants a firm gel, chooses HA because it is "gellan gum," and then keeps increasing the dosage because the gel isn't firm enough.

But if the target is a hard, brittle gel, increasing HA may not be the best solution.

The first question should be:

Are you using the right type?

The type of gellan gum should be chosen before you start optimizing the dosage.

The Practical Way to Develop an HA Formula

If I were developing a new HA application, I would keep the first test simple.

Start with:

HA gellan gum + your actual formulation + proper hydration + controlled cooling.

Then change one variable at a time.

For a beverage, I would pay particular attention to:

  • pH
  • HA concentration
  • Mineral content
  • Particle concentration
  • Hydration temperature
  • Mixing
  • Homogenization
  • Storage stability

Don't judge the formula only immediately after production.

Give it time.

A beverage that looks perfect on day one may show sedimentation after a few weeks.

The Bottom Line

High acyl gellan gum is not simply "the soft version" of gellan gum.

Its real value is the combination of soft elastic gel formation, strong suspension ability and useful rheological behavior at low concentrations.

For beverages and plant-based products, that combination can be extremely useful.

If your goal is to keep particles suspended without turning the product into a firm gel, HA gellan gum is one of the first ingredients worth testing.

And if your goal is a hard, clear, brittle gel?

That's where low acyl gellan gum becomes much more interesting.
