Can Gellan Gum Be Used in Carbonated Drinks?

Can you use gellan gum in a carbonated drink?

Yes, you can.

But carbonated beverages are a little different from ordinary beverages, so you can't simply take a non-carbonated formula and use exactly the same process.

What can gellan gum do in a carbonated drink?

One useful function is suspension.

For example, if a carbonated drink contains fruit particles, pulp, flavor components or other insoluble ingredients, gellan gum can help keep them suspended.

The goal is usually not to make the drink into a gel.

You want a very weak structure that can hold the particles in place while the drink still pours and drinks normally.

Does carbonation affect gellan gum?

Carbonation itself is not necessarily a problem.

But carbonated drinks are often acidic, and pH can have a significant effect on gellan gum performance.

The actual formulation matters more than simply asking whether the drink contains CO2.

What about low pH?

This is something I would check early in development.

Many carbonated beverages have a relatively low pH.

Gellan gum can work in acidic systems, but prolonged exposure to high temperature under acidic conditions can affect the polymer.

So the processing conditions are important.

Don't just look at the final pH.

Look at the combination of:

pH + temperature + holding time.

Should gellan gum be added after carbonation?

Usually, you don't want to simply add dry gellan gum directly into a finished carbonated drink.

Gellan gum needs to be properly dispersed and hydrated.

That normally requires a heating step, which means the gellan gum is generally incorporated into the beverage formulation before the final carbonation and filling process.

The exact process depends on the production line.

How much should I use?

There is no universal dosage for carbonated beverages.

If the purpose is suspension rather than gel formation, the amount can be quite low.

A good starting point is to test several low concentrations rather than adding a large amount immediately.

For example:

0.01% → 0.02% → 0.03%

Then compare the suspension stability and mouthfeel.

What happens if I use too much?

This is where things can go wrong.

Too much gellan gum may give the drink an unwanted thick or gel-like texture.

The beverage may also lose the clean mouthfeel that you want from a carbonated drink.

So the target is usually:

enough structure to suspend the particles,

but not so much structure that the consumer notices the gum.

What type of gellan gum should I use?

That depends on the application.

For a beverage where you mainly need suspension and a very weak structure, the choice of gellan gum and processing conditions should be tested together.

High acyl and low acyl gellan gum can give very different textures, so don't assume that changing from one type to the other will simply give you "more" or "less" suspension.

A small lab test is worth doing

Before running a production batch, I would test the complete beverage formulation on a small scale.

Check:

  • pH
  • gellan gum type
  • dosage
  • hydration temperature
  • mixing
  • carbonation
  • particle size
  • storage stability

And don't only look at the drink immediately after production.

Check it after several days or weeks.

A beverage that looks perfect on day one may behave differently during storage.

The simple answer

Yes, gellan gum can be used in carbonated beverages.

The main challenge is not the CO2 itself.

It is getting the right combination of suspension, pH, processing, dosage and mouthfeel.

If the goal is simply to keep particles suspended, don't try to make a strong gel.

A very weak structure can sometimes do the job much better.
