How to Read a Gellan Gum Certificate of Analysis (COA)

There are numbers everywhere.
Moisture.
Ash.
pH.
Heavy metals.
Microbiology.
Maybe gel strength.
So what should you actually look at?
A COA is useful, but only if you understand what it is telling you.
What Is a COA?
COA stands for Certificate of Analysis.
It is normally issued for a specific production batch.
This is important.
A product specification tells you what the product is supposed to meet.
A COA tells you the test results or compliance status for a particular batch.
For example:
Specification:
Moisture: ≤ 15%
COA:
Moisture: 8.2%
The first is the requirement.
The second is the actual batch result.
Start With the Product Identity
Before looking at any numbers, check:
- Product name
- Gellan gum type
- Grade
- Batch number
- Manufacturing date
- Expiry or retest information
Make sure the COA actually belongs to the material you are buying.
This sounds obvious, but it is the first thing to check.
Appearance
Appearance is usually one of the simplest tests.
Depending on the gellan gum type and specification, the powder may be described as:
- Fine white powder
- Off-white powder
- Light yellow powder
The exact appearance depends on the product.
If the batch looks dramatically different from previous lots, it is worth asking why.
Moisture
Moisture tells you how much water is present in the powder.
This matters because hydrocolloid powders can be affected by moisture during storage.
A moisture result within specification doesn't automatically tell you how well the product will perform, but an unexpected change can be a useful warning sign.
Ash
Ash is related to the inorganic mineral content remaining after the sample is burned under defined test conditions.
For gellan gum, this can be relevant because mineral content can influence functional behavior.
However, don't interpret ash alone as a direct measurement of gel performance.
It is one piece of the overall quality picture.
pH
The pH listed on a COA is normally measured under a specified test method and concentration.
It does not necessarily mean that your finished product will have the same pH.
Your final formulation contains other ingredients, water and minerals.
So don't confuse:
COA pH
with
finished-product pH
They are two different measurements.
Microbiological Results
For food and other sensitive applications, microbiological specifications can be very important.
Depending on the product and applicable requirements, a COA may include tests such as:
- Total plate count
- Yeast and mold
- Coliforms
- E. coli
- Salmonella
The exact tests and limits depend on the specification and intended application.
Always compare the results with the relevant specification.
Heavy Metals
Heavy metal limits can also appear on a gellan gum COA.
Depending on the market and application, the relevant limits may cover substances such as:
- Lead
- Arsenic
- Mercury
- Cadmium
Don't just look at the number.
Look at the test method and specification too.
Different standards can have different requirements.
Gel Strength
Some gellan gum grades may have a gel-strength specification.
This can be particularly useful when comparing functional performance.
But be careful.
A gel-strength number only has meaning when you know how it was measured.
Ask:
- What concentration?
- What water?
- What temperature?
- What setting time?
- What test method?
- What instrument?
Without the method, two gel-strength numbers may not be directly comparable.
Why Can Two COAs Look Different?
Suppliers may use different specifications and test methods.
For example, one supplier may report a particular parameter numerically.
Another may simply report:
"Complies."
Both may be acceptable depending on the specification.
If you need to compare suppliers, ask them to provide the actual test method and limits.
Does a COA Prove the Product Will Work?
No.
This is one of the most important points.
A COA can show that the batch meets its quality specifications.
It cannot guarantee that the product will perform perfectly in your specific formulation.
Your formulation may contain:
- Acid
- Calcium
- Sugar
- Proteins
- Salts
- Other hydrocolloids
All of these can affect the final behavior.
Why Should You Keep COAs?
Keep the COA for every commercial batch you receive.
If something changes later, you can compare the new batch with previous ones.
For example:
Batch A worked perfectly.
Six months later, Batch B behaves differently.
Now you can compare:
- Batch numbers
- Moisture
- Ash
- pH
- Microbiology
- Other quality parameters
This can make troubleshooting much easier.
What If a Result Is Very Close to the Specification Limit?
Don't automatically assume the product is bad.
A specification limit is a pass/fail boundary, not necessarily an indication of application performance.
But if a parameter changes significantly compared with previous batches, it may be worth asking the supplier for an explanation.
Trend information can sometimes be more useful than one isolated number.
A COA Is Not the Same as a Specification Sheet
This distinction is worth remembering.
Specification sheet:
"What should this product meet?"
COA:
"What did this batch show?"
You may need both.
The specification tells you the acceptance criteria.
The COA helps you verify the actual batch.
What Should You Ask the Supplier?
If you receive a COA and something isn't clear, ask.
For example:
"Could you please provide the test method for this parameter?"
or:
"Is this value an actual test result or simply a statement of compliance?"
A professional supplier should be able to explain the document.
The Bottom Line
Don't judge a gellan gum only by whether its COA has lots of numbers.
Understand what those numbers mean.
A useful COA should help you answer three basic questions:
What product is this?
Which batch is it?
Does this batch meet the agreed specification?
After that, the real test is still your application.
The COA tells you about the batch.
Your formulation tells you whether the gellan gum actually works for you.
