Two suppliers send you samples.
Both are called "gellan gum."
One is cheaper.
The obvious question is:
"Which one should I buy?"
Price matters, of course.
But with gellan gum, price alone doesn't tell you much about how the product will perform.
If you're seriously comparing suppliers, test the material under the same conditions.
Start With the Gellan Gum Type
First make sure you are comparing the same thing.
Is it:
- High acyl?
- Low acyl?
- A blend?
- A specific commercial grade?
You can't make a meaningful comparison between an HA product and an LA product simply because both are called gellan gum.
They can produce completely different textures and gel structures.
Compare the Technical Specifications
Ask both suppliers for their specifications.
Depending on the application, you may want to compare:
- Appearance
- Purity
- Moisture
- Ash
- pH
- Microbiological limits
- Heavy metals
- Gel strength

Certifications Are Not the Same as Performance
A supplier may have many certificates.

This sounds less technical, but it matters.
Ask a technical question.

See how the supplier responds.
A useful supplier should ask about your formulation rather than simply reply:
"Use 0.05%."
Technical support can save much more money than a small difference in raw material price.
Ask About Lead Time
This becomes important once the product is approved.
A supplier may offer an excellent sample but have a long production lead time.
For commercial production, consider:
- Normal lead time
- Minimum order quantity
- Packaging
- Shipping
- Production capacity
- Emergency supply options
A good raw material that isn't available when you need it isn't very useful.
Check Packaging
Gellan gum is a powder.
Packaging therefore matters.
Check whether the packaging protects the product from:
- Moisture
- Contamination
- Damage during transportation
Also check whether the packaging size fits your production process.
Run a Blind Test If Possible
This is a useful trick.
Give the samples neutral labels such as:
Sample A
Sample B
Don't tell the person performing the test which supplier is which.
Then compare the results.
This removes some of the psychological bias that can happen when everyone already expects one supplier to be better.
Test More Than One Batch
If the supplier passes the first test, don't stop there.
When possible, test samples from different production batches.
This tells you whether the performance is repeatable.
A supplier with slightly lower peak performance but very consistent batches may be more valuable than one with a great first sample and unpredictable results.
What About Changing Suppliers?
Don't switch suppliers based only on a lower quotation.
First compare:

→ Batch consistency
→ Documentation
→ Supply reliability
→ Total cost
Only then make the decision.
