How Is Gellan Gum Used in Jams and Fruit Spreads?

Gellan gum can be used in jams and fruit spreads to control texture, improve water retention and help maintain a consistent spread during storage.

Jam sounds simple.

Fruit, sugar and heat.

But making a jam that stays consistent during storage is not always that simple.

It needs to spread easily, hold its shape and avoid excessive water separation.

That's where gellan gum can be useful.

Why Add Gellan Gum to Jam?

Gellan gum can provide structure at relatively low concentrations.

Depending on the formulation, it can help with:

  • Texture
  • Water retention
  • Spreadability
  • Shape retention
  • Storage stability

The goal isn't necessarily to make the jam very firm.

A good jam still needs to spread easily on bread or pastries.

The Texture Has to Be Just Right

Too soft, and the jam may run.

Too firm, and it becomes difficult to spread.

This is especially important for fruit spreads used as fillings or toppings.

The desired texture is usually somewhere between a liquid and a firm gel.

Gellan gum can help fine-tune that texture.

Fruit Makes Things Complicated

Fruit isn't a standardized ingredient.

A test in plain water doesn't tell you enough.

Sugar Also Matters

Sugar isn't just there for sweetness.

High sugar levels change the water environment of the formulation.

This can affect texture and stability.

If the sugar content changes significantly, the gellan gum dosage may need to be adjusted as well.

High Acyl or Low Acyl?

The choice depends on the texture you're looking for.

High acyl gellan gum generally produces softer and more elastic gels.

Low acyl gellan gum generally produces firmer and more brittle gels.

For a soft fruit spread, the desired texture may point toward a softer gel structure.

For a product requiring stronger shape retention, a firmer structure may be more useful.

The final decision should come from application testing.

What About Pectin?

Many traditional jams rely heavily on pectin.

That doesn't automatically mean gellan gum has to replace it.

Gellan gum can be used as part of a stabilization system depending on the product.

In some formulations, combining hydrocolloids may provide a texture that is difficult to achieve with one ingredient alone.

But every additional hydrocolloid changes the system.

So combinations should be tested rather than assumed to work.

Water Separation Can Be a Problem

Open a jar of fruit spread and find a layer of liquid on the surface.

Not a great result.

Water separation can become more noticeable during storage.

Gellan gum can help control the water phase in some formulations, but it isn't a guaranteed solution.

If separation occurs, check the complete formulation and process.

Heating Is Important

Jam production normally involves heating.

That means the gellan gum experiences both high temperature and cooling.

The process can influence the final structure.

Important factors include:

  • Heating temperature
  • Holding time
  • Mixing
  • Ingredient addition order
  • Cooling rate

A laboratory process and an industrial process may therefore produce different results even with the same formula.

Don't Forget the Fruit Particles

Some fruit spreads contain pieces of fruit.

Those particles can settle if the surrounding system is too fluid.

A weak internal structure can help keep them distributed.

But again, the goal isn't to make the entire product into a stiff gel.

You want enough structure to control the particles while keeping the product spreadable.

How Much Gellan Gum Should You Use?

There is no single dosage for all jams.

The required level depends on:

  • Fruit type
  • Soluble solids
  • pH
  • Water content
  • Particle size
  • Desired texture
  • Other hydrocolloids

Start with a small range and compare the results.

It's usually better to gradually increase the concentration than to start excessively high.

Test After Storage

Fresh jam isn't enough.

Store samples and check them over time.

Look for:

  • Water separation
  • Texture changes
  • Color changes
  • Shrinkage
  • Surface changes
  • Changes in spreadability

A formulation that looks excellent on day one may not be the same after several weeks.

A Simple Practical Test

Take several identical jars.

Use the same fruit formulation and processing conditions.

Change only the gellan gum concentration.

After cooling, test:

Can it spread?

Does it hold its shape?

Does it release water?

Does it still look good after storage?

These simple questions can quickly narrow down the useful concentration range.

The Bottom Line

Gellan gum can be useful in jams and fruit spreads when you need controlled structure without making the product excessively firm.

But the fruit itself brings a lot of variables into the system.

So don't choose a gellan gum level based only on a recipe from another product.

Test it with your actual fruit, sugar, acid and processing conditions.

That's how you get a fruit spread that behaves properly not just when it is made, but weeks later on the customer's shelf.
