Fruit preparations can look simple, but manufacturers often have to solve several problems at the same time.

Fruit pieces need to remain evenly distributed, the preparation needs to have the right flow, and the product must remain stable during processing and storage.

Too much starch can make the system heavy. Too much pectin can create an overly firm texture. If the structure is too weak, fruit pieces may settle or float.

Gellan gum offers another option for building controlled structure.

Where Fruit Preparations Are Used

Fruit preparations are commonly used in:

  • Sauces
  • Fruit fillings

The requirements are different for each application.

Keeping Fruit Pieces Suspended

The fruit may be evenly distributed immediately after filling, but heavier pieces gradually move toward the bottom.

This becomes particularly noticeable in transparent or semi-transparent products.

A small amount of gellan gum can create structure in the continuous phase and slow down the movement of the fruit particles.

The goal is not to create a solid gel.

The preparation still needs to flow and be processed normally.

Floating Can Be a Problem Too

Not every fruit piece sinks.

Some pieces, especially those containing trapped air or with lower density, can move toward the surface.

This creates another distribution problem.

A properly designed gellan gum system can help reduce both upward and downward movement by increasing the structure of the surrounding liquid.

This can be especially useful when the product needs to look uniform throughout its shelf life.

Fruit Preparations for Dairy Products

Fruit preparations are widely used in yogurt and other dairy products.

The preparation may be produced separately and then combined with the dairy base.

The two systems can behave differently after mixing.

Acidity, calcium, milk proteins, sugar, and other ingredients can all influence the final texture.

A formulation that works perfectly in the fruit preparation alone may behave differently after it is added to the dairy product.

This is why the final mixed product should always be tested.

Heat Processing Changes the Requirements

Some fruit preparations are exposed to heating during processing.

This can include:

  • Pasteurization
  • Hot filling
  • Baking
  • Cooking
  • Reheating

The structure needs to survive the actual process.

For applications involving significant heat, low acyl gellan gum can be interesting because of its firm gel structure and thermal stability.

However, the target is not necessarily the strongest possible gel.

A fruit preparation needs the right texture after heating, not simply before heating.

Fruit Acidity Matters

Fruit systems can have relatively low pH.

Strawberry, raspberry, passion fruit, citrus, and other acidic fruits can create different formulation environments.

The behavior of gellan gum should therefore be evaluated at the actual pH of the finished product.

Do not make the decision based only on a neutral-water trial.

A formulation that looks excellent at pH 6 may behave differently when the fruit preparation is adjusted to a much lower pH.

Sugar Also Changes the System

Fruit preparations often contain substantial amounts of sugar.

Sugar affects water activity, solids content, viscosity, and the overall hydration environment.

This means the gellan gum cannot be evaluated independently.

A concentration that works in a simple water system may not give the same result in a high-solids fruit preparation.

The complete formula should be tested from the beginning of development.

Fruit Pieces Need Gentle Processing

If the preparation contains real fruit pieces, mixing conditions become important.

Aggressive mixing can damage soft fruit pieces.

The manufacturer may then mistakenly blame the hydrocolloid system for poor fruit appearance.

It is useful to separate two questions:

Does the formulation provide enough suspension?

And does the processing equipment handle the fruit gently enough?

Both need to be optimized.

Particle Size Makes a Difference

Large fruit pieces are more difficult to suspend than very small particles.

A large strawberry or peach piece behaves differently from fine fruit puree.

The larger and denser the particle, the more structure is required to slow its movement.

This means the formulation should be tested with the actual fruit particle size used in production.

Changing from 2 mm pieces to 8 mm pieces can completely change the suspension requirement.

Low Acyl vs. High Acyl

Low acyl gellan gum generally provides a firmer structure.

It may be useful when the fruit preparation needs stronger suspension or needs to tolerate significant processing.

High acyl gellan gum produces a softer and more elastic structure.

It can be worth testing when a softer mouthfeel is preferred.

In some formulations, the difference between the two types is obvious in the finished product.

In others, the concentration and processing conditions have a larger effect.

The best choice should therefore come from side-by-side trials.

Avoid Making the Preparation Too Thick

A common mistake is to keep increasing gellan gum until the fruit pieces stop moving.

That may solve the suspension problem but create a new one.

The preparation may become difficult to pump, difficult to fill, or unpleasant to eat.

It may also leave excessive residue in processing equipment.

The better approach is to find the lowest concentration that provides adequate suspension under the actual storage conditions.

A Practical Trial

A useful development trial can compare four formulations:

Control: current formula

Trial 1: low gellan gum level

Trial 2: medium level

Trial 3: higher level

Use the same fruit, particle size, sugar level, pH, and processing conditions.

Then check:

  • Fruit distribution
  • Settling
  • Floating
  • Pumpability
  • Filling performance
  • Texture
  • Appearance
  • Storage stability

Do not evaluate only immediately after production.

Check the product after storage because that is where particle movement usually becomes obvious.

Final Product Testing Is Essential

If the fruit preparation is an intermediate ingredient, testing it by itself is not enough.

For example, if it will eventually be mixed into yogurt, ice cream, or a bakery product, test the final product as well.

The surrounding food matrix can change the behavior of the preparation.

This is particularly important when calcium, proteins, acids, or other hydrocolloids are present.

Final Thoughts

Gellan gum can be useful in fruit preparations when the manufacturer needs controlled structure without simply making the product excessively thick.

Its ability to slow particle movement makes it interesting for preparations containing real fruit pieces, puree, or other suspended solids.

Low acyl and high acyl gellan gum provide different texture options, so both can be considered during formulation development.

The most practical approach is to start with low concentrations, use the actual fruit and particle size, and test the complete product throughout processing and storage.

In commercial production, the best formulation is usually the one that provides just enough structure to keep the fruit where it belongs while preserving good flow and eating quality.
