Gellan Gum Formula for Sauce and Dressing

A practical reference formula for sauces and dressings using gellan gum. This article provides a starting formulation for improving suspension stability, texture control, and reducing separation during storage.

The following formula is provided for reference and product development trials only. Actual formulation should be adjusted according to raw materials, processing conditions, and final product requirements.

Sauces and dressings are complex food systems containing water, oils, particles, spices, and other functional ingredients.

During storage, common problems include:

* phase separation
* sedimentation of particles
* water release
* unstable texture

Gellan gum can help create a controlled structure that improves stability while maintaining the desired flow properties.

Depending on the target texture, both high acyl and low acyl gellan gum may be considered.

Basic Sauce and Dressing Formula

For 100 kg finished sauce or dressing:

Water: 50–75 kg
Oil phase: 5–30 kg
Sugar: 5–15 kg
Seasonings and solids: 5–20 kg
Gellan gum: 100–500 g
Acid or vinegar: as required
Other ingredients: as required

Recommended starting range:

Gellan gum: 0.10–0.50%

Equivalent to:

100–500 g gellan gum per 100 kg sauce

Why Use Gellan Gum in Sauce Systems?

Sauces need the right balance between stability and flow.

A good sauce should:

* remain uniform during storage
* pour easily
* maintain suspended particles
* avoid excessive thickness

Gellan gum can provide a weak structure that helps stabilize the system without creating a solid gel.

HA or LA Gellan Gum Selection

The choice depends on the product target.

High Acyl Gellan Gum

Often considered when the product requires:

* softer texture
* smooth mouthfeel
* elastic structure

Examples:

* creamy sauces
* dressings
* dairy-based sauces

Low Acyl Gellan Gum

Often considered when stronger structure or suspension is required.

Examples:

* sauces with particles
* fruit-based sauces
* clear or firm systems

Suggested Processing Method

1. Prepare the water phase.

2. Premix gellan gum with sugar or dry ingredients.

3. Add the premix slowly under agitation.

4. Heat to approximately:

85–90°C

to hydrate the gellan gum.

5. Add oil phase, seasonings, acids, and other ingredients according to the process.

6. Homogenize if required.

7. Cool and evaluate the final texture.

Starting Trial Design

Because sauce systems vary greatly, a dosage trial is recommended.

Example:

Trial A:

0.10% gellan gum

Trial B:

0.20% gellan gum

Trial C:

0.30% gellan gum

Trial D:

0.50% gellan gum

Evaluate:

* viscosity
* flow behavior
* separation
* water release
* storage stability

What If the Sauce Separates?

Before increasing gellan gum, check:

* oil content
* emulsification process
* particle size
* pH
* mineral content
* mixing conditions

Separation is often caused by several factors working together.

What If the Sauce Becomes Too Thick?

Reduce gellan gum dosage gradually.

Example:

0.50% → 0.30% → 0.20%

The ideal formula depends on the desired application.

A dipping sauce and a pourable dressing may require very different textures.

Effect of Calcium and Minerals

Low acyl gellan gum performance can be affected by calcium and other ions.

Too much ionic interaction may produce:

* excessive gel strength
* poor flow
* uneven texture

Mineral content should be considered during formulation development.

Practical Starting Formula

For a first sauce or dressing trial:

100 kg product

100–500 g gellan gum

*

hydration at 85–90°C

is a reasonable starting range.

The final formulation should be optimized according to:

* oil level
* solids content
* pH
* desired texture
* processing equipment
