Gellan Gum Formula for Bakery Filling

A practical reference formula for bakery fillings using gellan gum. This article provides a starting formulation for creating stable fillings with improved heat resistance, texture control, and reduced leakage during baking.

The following formula is provided for reference and product development trials only. Actual formulation should be adjusted according to raw materials, processing conditions, and final product requirements.

Bakery fillings need to maintain their structure during processing, storage, and baking.

Common challenges include:

* filling leakage during baking
* poor shape retention
* syneresis after storage
* unstable texture

Gellan gum can be used in bakery filling systems to create a stable gel structure with good heat resistance.

Low acyl gellan gum is often considered when a firmer and cleaner gel texture is required.

Basic Bakery Filling Formula

For 100 kg finished bakery filling:

Water: 45–60 kg
Sugar: 20–35 kg
Fruit puree or filling ingredients: 10–30 kg
Low acyl gellan gum (LA): 100–300 g
Citric acid: adjust according to product requirement
Other ingredients: as required

Recommended starting range:

Low acyl gellan gum: 0.10–0.30%

Equivalent to:

100–300 g LA gellan gum per 100 kg filling

Why Use Gellan Gum in Bakery Filling?

Bakery fillings require a balance between:

* spreadability before baking
* stability during heating
* clean texture after cooling

Gellan gum can help provide:

* heat stability
* reduced leakage
* improved shape retention
* controlled texture

The objective is not simply to make the filling harder.

The goal is to create a filling that performs well during the entire baking process.

Suggested Processing Method

1. Mix water with sugar and other liquid ingredients.

2. Premix gellan gum with sugar or dry ingredients.

3. Add the premix slowly under agitation.

4. Heat the system to approximately:

85–90°C

to hydrate the gellan gum.

5. Add fruit puree or other filling components.

6. Adjust acidity and texture.

7. Cool and evaluate the final filling properties.

Starting Trial Design

Bakery filling texture depends strongly on the final product target.

A simple dosage screening:

Trial A:

0.10% gellan gum

Trial B:

0.15% gellan gum

Trial C:

0.20% gellan gum

Trial D:

0.30% gellan gum

Evaluate:

* filling strength
* spreadability
* heat resistance
* water release
* texture after cooling

What If the Filling Leaks During Baking?

Possible factors include:

* insufficient gel strength
* excessive free water
* fruit solids level
* baking temperature
* filling thickness

Increasing gellan gum may help, but the complete formulation should also be reviewed.

What If the Filling Is Too Firm?

Reduce gellan gum gradually.

Example:

0.30% → 0.20% → 0.15%

A good bakery filling should not become rubbery.

The desired texture depends on the product:

* pastry filling
* pie filling
* cake filling
* fruit filling

HA or LA Gellan Gum for Bakery Filling?

Low acyl gellan gum is commonly considered for firm and heat-stable filling systems.

High acyl gellan gum may provide:

* softer texture
* more elastic mouthfeel

The choice depends on the desired final texture.

Practical Starting Formula

For a first bakery filling trial:

100 kg filling
