Gellan Gum Formula for Jelly Dessert

Gellan gum is widely used in jelly and dessert gel applications because it can form clear, firm, and heat-stable gels at relatively low usage levels.
Compared with beverage applications, jelly products require a much stronger gel structure.
The main targets are:

Low acyl gellan gum is commonly considered for firm and transparent gel applications.
Basic Jelly Dessert Formula
For 100 kg finished jelly product:
Water: 70–80 kg
Sugar: 15–25 kg
Fruit juice or flavor ingredients: 5–15 kg
Low acyl gellan gum (LA): 150–300 g
Citric acid: adjust according to target pH
Calcium salt: adjust according to formulation requirements
Recommended starting range:
Low acyl gellan gum: 0.15–0.30%
Equivalent to:
150–300 g LA gellan gum per 100 kg jelly
Why Use Low Acyl Gellan Gum in Jelly?
Low acyl gellan gum can form:
* firm gels
* transparent structures
* clean breaking textures
* heat-stable gel systems
It is different from beverage applications where only a very weak structure is required.
For jelly products, the gel network itself is the main objective.
Suggested Processing Method
1. Premix gellan gum with sugar.
2. Add the dry mixture slowly into water under agitation.
3. Heat the system to approximately:
85–90°C
to fully hydrate the gellan gum.
4. Add sugar, fruit ingredients, acid, and other components.
5. Adjust calcium level if required.
6. Fill while hot.
7. Allow the product to cool and set.
Starting Trial Design
Because gel texture depends strongly on the formulation, a dosage trial is recommended.
Example:
Trial A:
0.15% LA gellan gum
Trial B:
0.20% LA gellan gum
Trial C:
0.25% LA gellan gum
Trial D:
0.30% LA gellan gum
Evaluate:
* gel strength
* transparency
* elasticity
* brittleness
* syneresis
* mouthfeel
What If the Jelly Is Too Weak?
Possible adjustments:
* increase gellan gum dosage
* optimize calcium level
* improve hydration conditions
* adjust pH
Do not only increase gellan gum without checking the mineral system.
What If the Jelly Is Too Brittle?
Low acyl gellan gum can produce firm and brittle gels.
Possible adjustments:
* reduce gellan gum level
* modify calcium concentration
* combine with other hydrocolloids if needed
The desired texture depends on whether the product requires:
* soft jelly
* elastic jelly
* firm jelly
* cutting gel
Effect of Calcium
Calcium ions can strongly influence low acyl gellan gum gel formation.
A suitable calcium level can improve:
* gel strength
* structure development
However, excessive calcium may cause:
* overly firm texture
* poor processing behavior
* uneven gel formation
Calcium optimization should always be performed together with gellan gum dosage.
HA or LA Gellan Gum for Jelly?
For traditional firm and transparent jelly:
Low acyl gellan gum is generally preferred.
High acyl gellan gum produces softer and more elastic textures and is usually considered for different applications.
The choice depends on the final texture target.

100 kg jelly product
