Gellan Gum Formula for Protein Beverage

A practical reference formula for protein beverages using gellan gum. This article provides a starting formulation, recommended gellan gum dosage range, processing considerations, and adjustment methods for improving protein drink stability.

The following formula is provided for reference and product development trials only. Actual formulation should be adjusted according to raw materials, processing conditions, and final product requirements.

Protein beverages are one of the more challenging beverage systems because proteins can interact with minerals, acids, and heat treatment conditions.

Common problems include:

* protein sedimentation
* phase separation
* uneven texture
* instability during storage

Gellan gum can help stabilize protein beverage systems by creating a gentle structure that supports suspended particles and improves overall consistency.

For many protein-containing beverages, high acyl gellan gum is often considered because it can provide a smooth and soft texture.

Basic Protein Beverage Formula

For 100 kg finished protein beverage:

Water: q.s. to 100 kg
Protein source: 2–8 kg
Sugar or sweetener: 2–8 kg
Oil or fat component: 0–3 kg
High acyl gellan gum (HA): 30–80 g
Minerals: as required
Flavor: as required

Recommended starting range:

High acyl gellan gum: 0.03–0.08%

Equivalent to:

30–80 g HA gellan gum per 100 kg protein beverage

Why Use Gellan Gum in Protein Beverages?

Protein drinks often require stability during:

* heat processing
* transportation
* long-term storage

Proteins may interact with calcium, salts, and other ingredients, causing instability.

A suitable level of gellan gum can help:

* reduce sedimentation
* improve suspension
* maintain a smooth texture
* improve storage stability

The goal is not to create a gel.

The goal is a stable, drinkable protein system.

Suggested Processing Method

1. Prepare the water phase and begin mixing.

2. Premix gellan gum with sugar or other dry ingredients.

3. Add the dry mixture slowly under agitation.

4. Heat the system to approximately:

85–90°C

to hydrate the gellan gum.

5. Add protein ingredients according to the selected process.

6. Adjust pH and mineral balance.

7. Homogenize if required.

8. Complete pasteurization or UHT processing according to the product design.

Protein systems can vary greatly depending on the protein source.

A practical screening range:

Trial A:

0.03% HA gellan gum

Trial B:

0.05% HA gellan gum

Trial C:

0.07% HA gellan gum

Trial D:

0.08% HA gellan gum

Evaluate:

* sedimentation
* viscosity
* mouthfeel
* protein stability
* storage performance

Important Factors Affecting Performance

The same gellan gum dosage may behave differently depending on:

Protein type

Milk protein, soy protein, pea protein, and other proteins have different behaviors.

Mineral content

Calcium and other ions can influence gellan gum structure.

pH

Acidic protein beverages require additional testing because protein stability may change.

Heat processing

UHT and sterilization conditions can affect the final texture.

What If Sedimentation Still Occurs?

Increasing gellan gum may help, but first check:

* protein concentration
* particle size
* homogenization conditions
* mineral balance
* pH
* heat treatment

The problem may come from protein instability rather than insufficient gellan gum.

What If the Beverage Becomes Too Thick?

Reduce the gellan gum level gradually.

For example:

0.08% → 0.06% → 0.05%

The best formulation is normally the lowest dosage that provides acceptable stability.

HA or LA Gellan Gum for Protein Beverage?

For most creamy or protein-containing beverages:

High acyl gellan gum is usually preferred.

It provides:

* softer texture
* smoother mouthfeel
* better beverage characteristics

Low acyl gellan gum may create a firmer gel structure and is usually selected for different applications.

Practical Starting Formula

For a first protein beverage trial:

100 kg protein beverage

The final commercial formula should be validated using the actual protein source, mineral system, processing conditions, and required shelf-life performance.
