Gellan Gum Formula for Fruit Juice Beverage

A practical reference formula for fruit juice beverages using gellan gum. This article provides a starting formulation, recommended dosage range, processing method, and adjustment tips for improving suspension and storage stability.

The following formula is provided for reference and product development trials only. Actual formulation should be adjusted according to raw materials, processing conditions, and final product requirements.

Fruit juice beverages often contain pulp, fruit particles, minerals, acids, and natural solids that can settle during storage.

Common challenges include:

* pulp sedimentation
* uneven appearance
* separation during shelf life
* inconsistent mouthfeel

Gellan gum can help maintain a more uniform beverage system by creating a light stabilizing network at a very low usage level.

Basic Fruit Juice Beverage Formula

For 100 kg finished fruit juice beverage:

Water: q.s. to 100 kg
Fruit juice concentrate: 10–30 kg
Sugar: 3–10 kg
Gellan gum: 20–50 g
Citric acid: as required
Flavor: as required
Other ingredients: as required

Recommended starting range:

Gellan gum: 0.02–0.05%

Equivalent to:

20–50 g gellan gum per 100 kg fruit juice beverage

Why Use Gellan Gum in Fruit Juice?

Fruit beverages often contain small particles that naturally tend to settle over time.

A properly designed gellan gum system can help:

* keep pulp evenly distributed
* reduce sedimentation
* improve visual stability
* maintain a consistent drinking experience

The objective is usually suspension, not thickening.

A good juice beverage should still feel like a drink, not a gel.

Suggested Processing Method

1. Prepare the water phase and begin agitation.

2. Premix gellan gum with sugar or another dry ingredient.

3. Slowly add the premix into the liquid.

4. Heat the system to approximately:

85–90°C

to hydrate the gellan gum.

5. Add fruit concentrate, acid, flavor, and other ingredients according to the production process.

6. Homogenize if required.

7. Cool and evaluate the finished beverage.

Starting Trial Design

Fruit juice systems can vary significantly depending on fruit type and solids content.

A simple dosage trial can be:

Trial A:

0.02% gellan gum

Trial B:

0.03% gellan gum

Trial C:

0.04% gellan gum

Trial D:

0.05% gellan gum

Evaluate:

* pulp suspension
* sedimentation
* clarity or appearance
* viscosity
* storage stability

What If Fruit Particles Settle?

Increasing gellan gum may help, but other factors should also be considered.

Check:

* fruit particle size
* pulp concentration
* juice acidity
* mineral content
* homogenization conditions
* storage temperature

Sometimes the particle size distribution has a greater influence than the gellan gum level.

What If the Beverage Becomes Too Thick?

Reduce the dosage gradually.

For example:

0.05% → 0.04% → 0.03%

The ideal dosage is the minimum amount that provides sufficient stability.

Higher dosage does not always mean better performance.

Effect of pH on Fruit Juice Formula

Fruit juices are usually acidic, and pH can influence gellan gum performance.

Different juices may behave differently because of:

* acidity level
* calcium and mineral content
* natural fruit components

Therefore, each fruit juice system should be tested individually.

Practical Starting Formula

For a first fruit juice beverage trial:

100 kg fruit juice beverage
