Suggested Processing Method

Step 1 — Premixing

Mix gellan gum with sugar or another dry ingredient.

Step 2 — Hydration

Add slowly into water under strong agitation.

Recommended hydration temperature:

85–90°C

Maintain sufficient mixing time for complete hydration.
