Gellan gum can help stabilize beverages, but separation can still happen. Here are some practical things to check, including pH, hydration temperature, gellan gum type, dosage, and processing.

You add gellan gum to a beverage, everything looks fine at first, and then a few hours later you see separation.

The first question is usually:

“Is the gellan gum not working?”

Not necessarily.

There are quite a few reasons why a gellan gum beverage can separate.

pH can be a big factor

Gellan gum does not behave exactly the same at every pH.

For some beverage systems, especially acidic drinks, a small change in pH can make a noticeable difference in stability.

So if one formula works at pH 4.0 but another starts separating at pH 3.5, don’t assume the same gellan gum dosage will work for both.

The formulation matters.

Hydration temperature matters too

This is one of the easiest things to overlook.

Gellan gum needs to be properly hydrated before it can do its job.

For beverage applications, I would normally look at a hydration temperature around 85–90°C, rather than assuming that simply mixing the powder into warm water is enough.

If the gum is not fully hydrated, increasing the dosage later may not solve the real problem.

More gellan gum isn’t always the answer

If a beverage separates, the first reaction is often:

“Let’s add more gellan gum.”

Sometimes that works.

Sometimes it makes the system worse.

Too much gellan gum can change the texture, create unwanted gel particles, or make the drink feel too thick.

It is usually better to check the whole system first:

* pH
* hydration temperature
* mixing
* gellan gum type
* mineral ions
* dosage
* processing conditions

HA and LA are not interchangeable

High acyl and low acyl gellan gum can behave very differently.

If you are trying to keep particles suspended in a beverage without creating a firm gel, choosing the right type of gellan gum can be more important than simply increasing the dosage.

This is why I don’t think there is one universal “gellan gum dosage for beverages.”

The right level depends on what you are actually trying to achieve.

A lab sample can behave differently from a production batch

This is probably the most frustrating part.

A small laboratory test may look perfect, but the production batch separates.

That doesn’t automatically mean the raw material changed.

The production process may be different:

mixing → heating → concentration → cooling → filling → storage

Every step can affect the final system.

So when troubleshooting separation, I would not look at gellan gum alone.

Look at the entire process.

That’s usually where the answer is.
