What Is the Difference Between Gellan Gum Gelation and Thickening?

Gellan gum can increase viscosity, form a weak network or create a firm gel depending on concentration and formulation. Understanding these different behaviors is important when developing a product.

One thing that often causes confusion with gellan gum is the word "gel."

You add a very small amount to a beverage and it helps keep particles suspended.

You add more and the liquid becomes noticeably structured.

Add even more and you can get a firm gel.

So is gellan gum thickening the liquid or forming a gel?

Actually, it can do both.

The difference is mainly in the concentration and the structure that develops.

What Is Thickening?

Thickening mainly means increasing the viscosity of a liquid.

The liquid still behaves like a liquid, but it flows more slowly.

Xanthan gum is a good example.

Increase the xanthan gum concentration and the liquid becomes progressively thicker.

What Is Gelation?

Gelation is different.

Instead of simply making the liquid more viscous, the polymer forms a three-dimensional network.

That network can hold water and give the system a defined structure.

At that point, you have something much closer to a solid than an ordinary thick liquid.

Where Does Gellan Gum Fit?

Gellan gum can operate across this range.

At a very low concentration, it may create enough structure to improve suspension without producing an obvious gel.

At a higher concentration, the network becomes stronger.

Eventually, the system can form a firm gel.

This is one reason gellan gum is useful in such different applications.

Why Is This Important for Beverages?

Consider a beverage containing particles.

You want the particles to remain suspended.

One solution is to make the entire beverage very thick.

But consumers may not like that.

A better approach can be to create a very weak internal network.

The drink can remain relatively free-flowing while the particles are held in suspension.

This is one of the most interesting uses of gellan gum.

What Happens When You Keep Increasing the Dosage?

Generally, the structure becomes stronger.

You may move from:

Free-flowing liquid

to

Slightly structured liquid

to

Weak gel

to

Firm gel

The exact transition depends on the gellan gum type and formulation.

There isn't a single concentration where every gellan gum suddenly becomes a gel.

Why Do HA and LA Behave Differently?

High acyl and low acyl gellan gum produce different gel structures.

HA generally produces a softer and more elastic gel.

LA generally produces a firmer and more brittle gel.

So even at the same concentration, the texture can be very different.

Can a Beverage Have a Gel Structure Without Feeling Like a Gel?

Yes.

This sounds strange at first.

But a very weak network can be enough to influence particle movement without producing a spoonable gel.

This is why gellan gum can be useful in suspension systems.

You don't always want a visible gel.

Sometimes you only want enough structure to stop particles from settling.

Why Does Cooling Matter?

The structure develops as the hydrated gellan gum system cools.

So the final behavior isn't determined only by the concentration.

Cooling conditions, ions, pH and the rest of the formulation can all affect the network.

This is why a hot solution and a cooled product can behave completely differently.

What About Shear?

The way the system responds to mixing or shaking can also be important.

Some gellan gum structures can be disrupted by shear and then partially recover afterward.

This can be useful in beverages and other products that need to flow during processing or consumption.

But the exact behavior depends on the formulation.

How Do You Know Which Behavior You Have?

Don't rely only on appearance.

A sample can look like a normal liquid but still have a weak internal structure.

Useful measurements include:

  • Viscosity
  • Yield stress
  • Gel strength
  • Sedimentation
  • Texture
  • Flow behavior

For simple development work, even a side-by-side comparison can tell you a lot.

A Practical Example

Suppose you have a beverage with suspended particles.

At 0.01% gellan gum:

The particles settle quickly.

At 0.02%:

Suspension improves.

At 0.03%:

The beverage is stable and still pours easily.

At 0.05%:

The drink starts to feel noticeably structured.

At 0.10%:

You may be approaching a much stronger gel-like system.

These numbers are only an illustration.

The actual useful range depends on the product.

Don't Confuse "Strong" With "Better"

This is one of the biggest mistakes in formulation.

If you are making a jelly, stronger may be useful.

If you are making a beverage, stronger may be exactly what you don't want.

The best structure is the one that matches the product.

The Bottom Line

Gellan gum doesn't have to behave as simply "a thickener" or "a gelling agent."

It can create different levels of structure depending on how you formulate and process it.

Think of it as a spectrum:

Liquid → structured liquid → weak network → gel

Your job as a formulator is to find the point on that spectrum that gives the product the properties you actually need.
