For this particular application, Low Acyl (LA) gellan gum is usually the better starting point.
That does not mean High Acyl gellan gum cannot work. It simply means that if the main objective is a clear beverage with a very low level of structure to keep particles from settling, LA is generally the more logical type to evaluate first.
Why Is Low Acyl Usually the First Choice?
Low Acyl gellan gum can form a firm, relatively brittle gel structure at very low concentrations.
That characteristic is useful in beverages because you do not necessarily want to make the entire drink into a gel.
Instead, you want a very weak three-dimensional network throughout the liquid.
The network can help slow down the movement of small particles and keep them distributed throughout the beverage.
In other words, the purpose is not:

For a fruit beverage containing fine pulp, LA is commonly the first type worth testing.
The important question is how large and how dense the particles are.
Very fine particles may require only a small amount of structure to remain suspended.

This is why two fruit beverages can use different gellan gum concentrations even though both are described as “fruit drinks.”
What If the Beverage Contains Aloe Vera Pieces?
Aloe vera beverages are another practical example.
The product may need to maintain visible pieces throughout the bottle while still looking relatively clear.
In this situation, the gellan gum is not being used to create a jelly texture.
It is being used to control the movement of the pieces.
LA is therefore generally the first type to evaluate.
The dosage then needs to be adjusted according to the size, shape, and concentration of the aloe vera pieces.
When Would High Acyl Make More Sense?
There are situations where HA can be the better choice.
For example, if the product is not primarily a clear suspension beverage and you want:

* More elasticity

then HA may be worth evaluating.
So the decision should not be based simply on the word “beverage.”

If your product looks more like:
Soft structure + elastic texture + body + gel-like characteristics

If you are not sure which description matches your product, describe the product and the required texture to the supplier before choosing a grade.
What Should You Tell the Supplier?
You do not need to write a complicated technical report.
A simple inquiry could be:
> We are developing a clear fruit beverage containing fine suspended particles. We want the particles to remain suspended during storage without making the beverage noticeably thick or gel-like. We are considering Low Acyl gellan gum and would like to test a suitable starting concentration.
That immediately tells the supplier much more than:
> We need gellan gum for a beverage.
If you know the pH, particle concentration, heating process, and approximate Brix, include those as well.
What Should You Test First?
For a new clear suspension beverage, I would not start by testing ten different products.
Start with a small number of controlled trials.
For example, evaluate an LA gellan gum at several low concentrations while keeping everything else unchanged.
Then observe:
* Particle settling
* Clarity
* Pourability
* Viscosity
* Mouthfeel
* Sedimentation after storage
If the particles remain suspended but the beverage becomes too structured, the dosage is probably higher than necessary.
If the beverage remains very fluid but the particles settle quickly, the dosage or processing conditions may need adjustment.
Do You Always Need Calcium?
Not necessarily.
The mineral environment of the beverage can influence gellan gum performance, and calcium can have a significant effect on gel structure.
But this does not mean that you should automatically add calcium to every clear beverage.
The formulation may already contain sufficient ions.
If you add calcium without considering the existing mineral content, you may create a structure that is much stronger than intended.
For a new formula, it is better to evaluate the actual water and ingredient composition before deciding whether additional calcium is necessary.
The Practical Takeaway
For a clear beverage that needs fine particles to remain suspended without creating a noticeable gel, Low Acyl gellan gum is generally the first type I would evaluate.
High Acyl is not wrong; it simply has a different functionality and is usually more attractive when softness, elasticity, or body is part of the target.
The key is to think about the job the gellan gum needs to perform.
If the job is simply to create enough structure to keep particles from settling while maintaining a light, pourable beverage, start with LA and work toward the lowest effective concentration.
That gives you a much more practical starting point than choosing between HA and LA based only on the fact that both are gellan gum.
