This is one area where gellan gum can be useful.

What Does Gellan Gum Do in Pet Food?

First look at the complete stabilizer system.

You may have several ingredients contributing to structure.

Protein + starch + fiber + gellan gum

can produce a much stronger system than gellan gum alone.

Reducing the gellan gum may help, but it isn't always the only solution.

What If the Product Is Too Soft?

Check more than concentration.

Look at:

  • Hydration
  • Heating
  • Cooling
  • Mineral content
  • Ingredient order
  • Other stabilizers

Poor hydration can sometimes look like a dosage problem.

Storage Testing Is Important

Wet pet food can spend a long time in storage before being opened.

So stability testing should not stop after one day.

The product needs to remain consistent throughout its intended shelf life.
