Instant soup looks like a simple product, but keeping the ingredients evenly distributed can be surprisingly difficult.

A soup may contain vegetable particles, herbs, spices, fat droplets, starch, protein, or other insoluble ingredients. Once water is added, some of these materials tend to float while others settle to the bottom.

If the soup is too thin, the ingredients separate quickly.

If it is made too thick with starch or another thickener, the product can feel heavy and lose the texture consumers expect from a soup.

This is one area where gellan gum can be useful.

The objective is not necessarily to make the soup thick. In many formulations, the more important job is to create enough structure to keep particles suspended and give the liquid a better overall body.

Why Soup Ingredients Settle

Gravity is always working against the formulator.

Particles that are denser than the surrounding liquid naturally move downward.

Oil droplets may behave in the opposite direction and rise toward the surface.

A soup containing both solid particles and oil therefore has two different stability problems.

Traditional thickeners can slow these movements by increasing viscosity.

But simply increasing viscosity is not always the best solution.

A soup that pours like a sauce is not necessarily a successful soup.

The formulation needs enough structure to control separation while still flowing and eating like soup.

Gellan Gum Can Build Structure at Low Use Levels

One of the interesting characteristics of gellan gum is its ability to create structure at relatively low concentrations.

This makes it different from simply adding more starch.

A small amount can change the physical behavior of the liquid without turning the entire product into a thick paste.

For manufacturers, this can be useful when the target is:

Clear Soup and Cream Soup Are Different

The same gellan gum formulation should not be used blindly across different soup types.

A clear soup has very different requirements from a cream soup.

In a clear soup, excessive gel formation can be immediately visible.

The liquid may lose the clean appearance that the product is supposed to have.

In a cream soup, on the other hand, a little more structure may be acceptable because the product is already opaque.

The target texture is therefore just as important as suspension stability.

Particle Suspension Is Often the Real Reason to Use Gellan Gum

Imagine an instant soup containing small vegetable pieces.

Immediately after mixing, everything looks fine.

After five minutes, some particles have started settling.

After ten minutes, the bottom of the cup contains most of the heavier ingredients.

This is not necessarily a viscosity problem.

It is a suspension problem.

A weak three-dimensional structure in the continuous phase can help slow down particle movement.

This allows the consumer more time to see and eat the ingredients evenly instead of getting most of them at the end of the bowl.

Too Much Gellan Gum Creates a Different Problem

This is where formulation work becomes important.

If the gellan gum level is pushed too high, the soup can develop an undesirable gel-like texture.

Instead of behaving like a liquid, it may become slightly elastic or spoonable.

That may be useful in some concentrated soup products, but it is usually not what consumers expect from an instant soup.

The goal is therefore not maximum gel strength.

The goal is controlled structure.

In many applications, the best result is obtained when the consumer barely notices the gellan gum itself but notices that the soup feels more uniform.

Hydration Is Critical

Gellan gum needs to be properly hydrated.

This becomes more complicated in instant soup because the formulation may contain starch, salt, sugar, protein, spices, and other dry ingredients.

If the gellan gum is not dispersed properly, small lumps can form.

These lumps may not hydrate completely and can lead to inconsistent performance.

A better production process is often to first disperse the gellan gum properly and establish adequate hydration before the rest of the formulation interferes with the process.

The exact process depends on whether the product is supplied as a dry mix, liquid concentrate, or finished soup.

Dry Instant Soup Mixes Require Special Attention

A dry soup mix creates another challenge.

The gellan gum must be distributed evenly throughout the powder.

If the product is manufactured by blending several dry ingredients, particle size and mixing behavior become important.

A very small amount of gellan gum mixed into a large quantity of salt, starch, or other powder can segregate if the physical properties of the ingredients are very different.

This can create an unusual problem:

The formula is correct on paper, but individual sachets do not contain exactly the same amount of gellan gum.

For large-scale production, the dry blending process therefore matters just as much as the formulation.

Instant Reconstitution Is Another Test

A soup mix may perform perfectly when prepared in the factory but fail when the consumer prepares it.

Consumers rarely follow laboratory conditions exactly.

They may use:

  • Slightly less water
  • Slightly more water
  • Cooler water
  • Hotter water
  • Different mixing speeds
  • Different standing times

The formulation needs enough tolerance to handle normal consumer variation.

For this reason, reconstitution testing should include more than one water temperature and preparation method.

Gellan Gum and Starch Can Work Together

Gellan gum does not necessarily have to replace starch.

In many soup systems, the two ingredients can have different jobs.

Starch can provide body and thickness.

Gellan gum can provide additional structure and suspension.

This can allow the formulator to reduce the amount of starch required while maintaining the desired texture.

However, the interaction needs to be tested.

Too much starch combined with too much gellan gum can produce a product that feels excessively thick or pasty.

The best formulation is usually found by adjusting both components together.

High Acyl or Low Acyl?

The choice depends on the target texture.

Low acyl gellan gum generally produces a firmer and more brittle gel structure.

High acyl gellan gum produces a softer and more elastic structure.

For a liquid soup, neither type should automatically be selected simply because it produces the strongest gel.

The important question is what kind of structure is required.

If the product needs gentle suspension without an obvious gel texture, the softer behavior of high acyl gellan gum may be worth investigating.

If stronger structure is required at a very low use level, low acyl gellan gum may be considered.

The final answer should come from actual trials.

What Should Be Tested?

A simple development trial can compare several formulations.

Keep the soup base unchanged and vary only the gellan gum level.

Then measure:

  • Settling after 5 minutes
  • Settling after 10 minutes
  • Settling after 30 minutes
  • Flow behavior
  • Pourability
  • Mouthfeel
  • Particle distribution
  • Appearance after cooling
  • Reheating behavior

For commercial products, storage stability should also be checked.

A formulation that works immediately after production may behave differently after several weeks or months.

Where Else Can This Approach Be Used?

The same suspension principle can be useful beyond instant soup.

Potential applications include:

  • Soup concentrates
  • Ready-to-eat soups
  • Vegetable soups
  • Meat soups
  • Sauce-like soup bases
  • Instant noodle soup bases
  • Powdered seasoning systems containing visible particles

Each product has different processing requirements, so the formulation should be developed around the actual product rather than copied from another application.

Final Thoughts

Gellan gum can be useful in soup formulations when the real problem is not simply "the soup is too thin," but rather "the ingredients do not stay where they should."

That distinction is important.

Increasing viscosity can slow down separation, but it can also make a soup unnecessarily heavy.

Gellan gum offers another approach: create a controlled internal structure that helps suspend particles while keeping the product relatively fluid.

For manufacturers, the most useful starting point is a small concentration trial, followed by real-world reconstitution and settling tests.

The goal is not to make the strongest gel.

The goal is to make the soup behave better.
