Gellan Gum Formula for Fruit Jam and Fruit Spread

A practical reference formula for fruit jam and fruit spread using gellan gum. This article provides a starting formulation for improving texture, reducing syneresis, and maintaining stability during storage.

The following formula is provided for reference and product development trials only. Actual formulation should be adjusted according to raw materials, processing conditions, and final product requirements.

Fruit jams and spreads are semi-solid food products that require a balance between texture, spreadability, and storage stability.

Common formulation challenges include:

* water separation
* weak texture
* poor spreadability
* unstable structure after storage

Gellan gum can be used in fruit-based systems to improve texture control and water retention.

Depending on the desired texture, low acyl or high acyl gellan gum may be considered.

Basic Fruit Jam Formula

For 100 kg finished fruit jam:

Fruit puree: 35–55 kg
Sugar: 35–55 kg
Water: 5–20 kg
Gellan gum: 100–300 g
Citric acid: adjust according to target pH
Other ingredients: as required

Recommended starting range:

Gellan gum: 0.10–0.30%

Equivalent to:

100–300 g gellan gum per 100 kg fruit jam

Why Use Gellan Gum in Fruit Jam?

Fruit jams require a structure that is:

* easy to spread
* stable during storage
* resistant to water release
* acceptable in mouthfeel

Gellan gum can help provide:

* controlled gel strength
* improved water binding
* consistent texture

The goal is not always the strongest gel.

A good jam should spread easily while maintaining its shape.

HA or LA Gellan Gum Selection

Low Acyl Gellan Gum

May be considered when the product requires:

* stronger gel structure
* cleaner texture
* better shape retention

High Acyl Gellan Gum

May be considered when the product requires:

* softer texture
* more elastic mouthfeel
* smoother spreading properties

The final selection depends on the product style.

Suggested Processing Method

1. Prepare fruit puree and water phase.

2. Premix gellan gum with sugar.

3. Add the mixture slowly under agitation.

4. Heat the system to:

85–90°C

to hydrate the gellan gum.

5. Add acid and adjust the final formulation.

6. Concentrate if required.

7. Cool and evaluate texture.

Starting Trial Design

Fruit composition can greatly affect gel behavior.

A practical screening range:

Trial A:

0.10% gellan gum

Trial B:

0.15% gellan gum

Trial C:

0.20% gellan gum

Trial D:

0.30% gellan gum

Evaluate:

* spreadability
* gel strength
* water release
* texture after storage
* appearance

What If Water Separation Occurs?

Possible factors include:

* fruit solids content
* sugar concentration
* pH
* storage temperature
* insufficient structure

Increasing gellan gum may help, but the entire formula should be reviewed.

What If the Jam Is Too Firm?

Reduce gellan gum gradually.

Example:

0.30% → 0.20% → 0.15%

The ideal texture depends on the application:

* bread spread
* bakery filling
* topping
* dessert sauce

Effect of Fruit Acidity

Fruit products are naturally acidic.

Factors such as:

* pH
* organic acids
* mineral content

can influence gellan gum performance.

Different fruits may require different optimization.

For example, strawberry, mango, citrus, and berry systems may behave differently.

For a first fruit spread trial:

100 kg fruit jam
