Gellan Gum Formula for Aloe Vera Drink

A practical reference formula for aloe vera beverages using gellan gum. This article provides a starting formulation for keeping aloe vera pieces suspended, including gellan gum type selection, dosage range, processing conditions, and troubleshooting tips.

The following formula is provided for reference and product development trials only. Actual formulation should be adjusted according to raw materials, processing conditions, and final product requirements.

Aloe vera drinks are a common example of clear suspension beverages.

Although the liquid part may look stable immediately after production, aloe vera cubes or particles can gradually settle during storage.

Common challenges include:

* aloe vera pieces settling at the bottom
* uneven distribution after storage
* poor visual appearance
* unstable suspension after transportation

Low acyl gellan gum is often used in this type of beverage because it can create a weak, transparent suspension network while maintaining a low-viscosity drinking experience.

Basic Aloe Vera Drink Formula

For 100 kg finished aloe vera beverage:

Water: q.s. to 100 kg
Aloe vera pieces: 5–15 kg
Sugar: 5–10 kg
Low acyl gellan gum (LA): 15–25 g
Calcium salt: adjust according to formulation requirements
Citric acid: as required
Flavor: as required

Recommended starting range:

Low acyl gellan gum: 0.015–0.025%

Equivalent to:

15–25 g LA gellan gum per 100 kg beverage

Why Use Low Acyl Gellan Gum?

Aloe vera beverages usually require:

* clear appearance
* stable particle suspension
* low viscosity
* good flavor release

Low acyl gellan gum can form a very weak gel network that supports suspended particles without creating a thick texture.

The goal is:

Not a gel drink.

Not a thick beverage.

The goal is a stable suspension system.

Suggested Processing Method

1. Prepare the water phase and start agitation.

2. Premix low acyl gellan gum with sugar or other dry ingredients.

3. Add the dry mixture slowly into the water.

4. Heat the system to:

85–90°C

to fully hydrate the gellan gum.

5. Add calcium ions or other mineral components according to the formulation design.

6. Add aloe vera pieces carefully to avoid damaging the particles.

7. Adjust pH, pasteurize, and fill.

Starting Trial Design

For aloe vera beverages, a small dosage screening test is recommended.

Example:

Trial A:

0.015% LA gellan gum

Trial B:

0.020% LA gellan gum

Trial C:

0.025% LA gellan gum

Evaluate:

* suspension ability
* particle distribution
* clarity
* viscosity
* storage stability

Role of Calcium

Calcium ions can influence low acyl gellan gum performance.

A suitable calcium level can help develop the suspension structure.

However, excessive calcium may create:

* stronger gel formation
* uneven texture
* processing difficulties

Therefore, calcium addition should be optimized together with the gellan gum level.

What If Aloe Vera Pieces Sink?

Increasing gellan gum is one possible adjustment.

However, also check:

* aloe vera particle size
* density difference between liquid and particles
* sugar concentration
* mineral content
* mixing conditions

Particle suspension depends on the whole system, not only the hydrocolloid dosage.

What If the Beverage Becomes Too Structured?

Reduce the gellan gum level gradually.

For example:

0.025% → 0.020% → 0.015%

The best formula is usually the lowest dosage that provides sufficient stability.

Practical Starting Formula

For a first aloe vera beverage trial:

100 kg aloe vera beverage

15–25 g low acyl gellan gum

hydration at 85–90°C

is a reasonable starting point.

Further optimization should be based on:

* aloe vera particle size
* water mineral content
* calcium level
* pH
* filling process
* expected shelf life

This formula is intended for laboratory and pilot-scale development only. Commercial production should always be validated using the actual raw materials and production equipment.
